Detailed description of the invention The process according to the invention comprises: a) production of glutathione from a microbial biomass, preferably a yeast, b) optionally, lysis of said biomass under acidic conditions, c) separation of the biomass and its fragments from the aqueous solution containing glutathione, d) purification of the aqueous solution of glutathione by resin chromatography in one or more steps, under controlled temperature and pH conditions, using aqueous eluents only, e) optionally, decolourising of the glutathione aqueous solution with charcoal, diatomaceous earths or other decolorizers, f) spray-drying of the purified or partly purified glutathione solution to obtain a solid product in the form of almost spherical particles
