This saison was fermented in a large oak barrel and later transferred to oak barriques (225L) for another 6 months. Before the two parts were mixed together, the saison was lightly dry hopped for another 3 months. We added a touch of Sicilian sage to the final blend to macerate for a few days before bottling.
